How to Make Pancakes Fluffy
There are only a few simple steps to start making delicious fluffy pancakes. First get a recipe that you would like to try and make sure you have all the ingredients. This will keep you from falling behind. Gather the ingredients together and you are all set.
Step one, measure the dry ingredients correctly. If the recipe calls for sifted flour, make sure put it through a sifter as instructed. Make sure you measure out the right amount of the ingredients or you could end up with a mess in the end.
Now you will need to correctly measure out the wet ingredients. Again, precision is key. Use a liquid measuring cup to measure out all the wet ingredients including the milk and oil. Open up the eggs one at a time separately and break up the yolks.
Make two separate bowls, one for the wet ingredients, and one for the dry ingredients. Mix them each separately very well. Stir the dry ingredients with a spoon and beat the wet ingredients together so that they are completely incorporated.
Now pour the wet ingredients over the dry ingredients. Stir the entire amount until it forms a batter. Be gentle. Do not over-beat the ingredients or else the pancakes will be tough. You do not want tough pancakes. Just stir until combined.
Now you will need to retrieve your pan or griddle. I like to use a big electric griddle that I can plug in away from the stove. Use a little bit of oil or butter to lightly grease the pan. You could also use cooking spray for this step. Heat the pan to medium high heat.
Now pour some of the batter onto the pan. Use a ladle or measuring cup and measure out about a quarter of a cup. You can use more if you want bigger pancakes or less if you want smaller pancakes. Add a little milk to the batter if you want thinner pancakes.
Tiny bubbles will soon begin to form about a minute after pouring. Now is the time to flip them. Cook them on the pan for another minute or until golden brow. Serve warm with syrup and butter.

The Storage Life of Mountain House Freeze Dried Food
The shelf life of your long term food storage is determined by four critical factors. You need to be aware of this four factors if you are starting a food storage program for your family, or even if you already have one. Knowing these things will help you obtain the longest shelf life possible.
The four factors are as follows. The temperature of the storage area, the moisture content of the food, the atmosphere in the storage container, and the storage container itself. Lets look at each of these factors.
1) Temperature of the Storage Area
The factor that has the most to do with how long storable foods will last is temperature. Food stored in a warm environment will last only a fraction of the time that it would last in a cool, dry place. Generally, you want the area to be as cool as possible, but certainly above freezing temperature. Another important consideration is that the storage area temperature be relatively constant. Frequent temperature changes will also shorten the food’s life.
The bottom line is that you want to store your food in a cool, dry place, where the temperature is relatively constant.
2) Moisture Content of the Food
Foods with a high moisture content can spoil in their containers. Generally, long term storable foods should have a moisture content of 10% or less. This is sometimes hard to achieve without specialized equipment.
Freeze dried foods are specially-prepared for this purpose. Their moisture content has been addressed in the preparation process.
3) Atmosphere in the Storage Container
Oxygen oxidizes many of the compounds found in food. There, foods packed in air will not store as well. Nitrogen is popular for storing food and it works very well. Another alternative is carbon dioxide.
Oxygen absorber packets are also a popular method of packing food. You place one absorber in the food container and seal the lid. The absorber will remove the oxygen in the container and create a vacuum seal. Obviously, your storage container must be strong enough to withstand this vacuum pressure and hold it for the term of the storage.
Food packed in nitrogen in #10 cans is a very popular choice for many manufacturers of long-term storable foods.
4) The Storage Container of the Food
You want your storage containers to have a hermetic seal, which means they are air-tight. Food-grade storage buckets and #10 cans work very well for this.
I’ll stress again, that a very important factor of storage containers is that they must be food-grade. There are many 5 gallon buckets made of food-quality plastic. Since #10 cans are popular, they often have an enamel lining which makes them suitable for food storage.
If you buy commercially-prepared food units, the second, third, and fourth factors are taken care of by the manufacturer. However, you still want to store you food unit in a cool, dry, dark place, in order to satisfy the first factor.
You can buy food-grade plastic buckets, add the food, and then seal them yourself. You will need to rent a nitrogen cylinder from your local welding supply company. When you pack the buckets with the nitrogen, the oxgen will be displaced.
